You say "2 pinch" a lot. I imagine this means a tiny pinch between fingers so that would be subjective. Just want to be specific though I have been known to fiddle with recipes all the time ;-)

2 pinches is subjective - you've got the right idea. Just pick up what you can between your thumb and index finger and you've got the perfect pinch!
