Winter squashes, including butternut, are eaten in the autumn after they have absorbed the sun's energy over the summer. This stored energy gives squashes a warm ojas building heartiness that can comfort you through colder weather.

Where most tonic create dampness, squashes are unusual in that they are not only hearty, yet also drain excess fluids because of a mild diuretic nature. This dual quality makes them ideal for those trying to lose weight but still struggle with comfort food cravings in autumn. Squashes are high in complex carbohydrates. Their sweetness is thus safe for diabetics.

The deep orange color of butternut squashes are signs they are high in carotenes, a precursor to vitamin A. These carotenes, together with butternut squashes sweetness and cooling nature make it an excellent liver tonic. Carotenes also benefit the eyes.

Buying & Preparation

Butternut squashes are considered a winter squash along with acorn squash, pumpkins, and spaghetti squashes. They have a tough outer skin that is great for storage through the long winter months. The hardest part of butternut squash is the prep. It takes strength to cut through the center of a butternut squash. Sometimes I use a cleaver. Then I slice the butternut in circles. Work around each circle I trim the skin off. It takes about 15 minutes per squash.

Cooking Butternut Squash

Butternut squash is equally adept in sweet and savory dishes. Bake them and garnish with fresh herbs like sage, put them in a pie with cinnamon and nutmeg and garnish with pecan, or purree in a soup with fresh herbs like sage. Butternut squash is excellent when curried. They are often stuffed into dumplings such as raviolies. They may be sauteed and served atop greens. Steam butternut squash instead of boiling, unless you plan to use the liquid, as the liquid will absorb most of the flavor.

About the Author

John Immel, the founder of Joyful Belly, teaches people how to have a healthy diet and lifestyle with Ayurveda biocharacteristics. His approach to Ayurveda is clinical, yet exudes an ease which many find enjoyable and insightful. John also directs Joyful Belly's School of Ayurveda, offering professional clinical training in Ayurveda for over 15 years.

John's interest in Ayurveda and specialization in digestive tract pathology was inspired by a complex digestive disorder acquired from years of international travel, as well as public service work in South Asia. John's commitment to the detailed study of digestive disorders reflects his zeal to get down to the roots of the problem. His hope and belief in the capacity of each & every client to improve their quality of life is nothing short of a personal passion. John's creativity in the kitchen and delight in cooking for others comes from his family oriented upbringing. In addition to his certification in Ayurveda, John holds a bachelor's degree in mathematics from Harvard University.

John enjoys sharing Ayurveda within the context of his Catholic roots, and finds Ayurveda gives him an opportunity to participate in the healing mission of the Church. Jesus expressed God's love by feeding and healing the sick. That kindness is the fundamental ministry of Ayurveda as well. Outside of work, John enjoys spending time with his wife and 7 kids, and pursuing his love of theology, philosophy, and language.

I do the same with acorn squash, comes out wonderful and no risk loosing a hand( sprinkle with cinnamon and ghee ya ya ya ya Ya yum 5 stars
