Recipes with Prunes (dried): Plum Sauce with Rosemary
High fiber (pectin) and phenolic compounds have made prunes famous as laxative. While prunes are a great choice of laxative for Kapha's with lazy colon constipation, Vata should take caution due to the diuretic nature of prunes. High potassium makes plums a diuretic and drying for Vata, a quality easily counterbalanced with salt.

Plums are high in magnesium and iron. Pairing with salt allows Vata constitutions to benefit from plums' electrolyte-replenishing and blood building effects. High beta-carotene and citric acid contributes to an overall blood balancing and liver-soothing effect, experienced as a cool feeling in the eyes after a refreshing glass of prune juice.

High in sugar, fiber, Vitamin A, K, potassium, copper & manganese. Prunes are high in anti-oxidants. Dried prunes contain high doses of a chemical called acrylamide which is a known neurotoxin and a carcinogen.

Prunes are often labeled as 'dried plums.'

Cooking Prunes (dried)

Prune ice-cream is popular in the Dominican republic. Prune pastries are popular in New York. Prune juice is sweet, thick, and cooling. Saladitos are dried, salted plums, sometimes sweetened with sugar and anise or coated in chile and lime. The name means 'little salty things.' Although a candy in Mexico, the recipe originates in China. There, the salted, dried plums are stuffed into orange or lemons, where the plum absorbs the juices of the sour fruit.

Ayurveda recommends soaking dried fruits before eating. Dried fruits are generally sweeter and harder to digest than fresh ones. They also absorb precious digestive juices. For example. one cup of fresh plums is equivalent to cup dried prunes. To reconstitute them, dried prunes must absorb at least 3 times their volume in water from the digestive tract. Gastric juices also have a harder time penetrating poorly chewed, dense dried fruits. For those with dry or otherwise weak digestion the sweetness of dried fruits quickly leads to fermentation, gas and bloating.

About the Author

John Immel, the founder of Joyful Belly, teaches people how to have a healthy diet and lifestyle with Ayurveda biocharacteristics. His approach to Ayurveda is clinical, yet exudes an ease which many find enjoyable and insightful. John also directs Joyful Belly's School of Ayurveda, offering professional clinical training in Ayurveda for over 15 years.

John's interest in Ayurveda and specialization in digestive tract pathology was inspired by a complex digestive disorder acquired from years of international travel, as well as public service work in South Asia. John's commitment to the detailed study of digestive disorders reflects his zeal to get down to the roots of the problem. His hope and belief in the capacity of each & every client to improve their quality of life is nothing short of a personal passion. John's creativity in the kitchen and delight in cooking for others comes from his family oriented upbringing. In addition to his certification in Ayurveda, John holds a bachelor's degree in mathematics from Harvard University.

John enjoys sharing Ayurveda within the context of his Catholic roots, and finds Ayurveda gives him an opportunity to participate in the healing mission of the Church. Jesus expressed God's love by feeding and healing the sick. That kindness is the fundamental ministry of Ayurveda as well. Outside of work, John enjoys spending time with his wife and 7 kids, and pursuing his love of theology, philosophy, and language.
